I heard Dr. Tom O’Bryan say in one of his interviews that he knows people are thinking that he believes everything bad is caused by gluten! I remember when I first heard about gluten sensitivity I was really annoyed. I honestly couldn’t believe the “staff of life” was being targeted as the opposite of life. It didn’t make sense. I remember completely dismissing the thought for a while especially since I loved to bake so much. After all, I still needed to perfect my sourdough loaf and my vintage recipe for braided egg bread must never be a suspect for dietary deletion. No way. Not EVEN going to think about it. Subject closed.
I get this question all the time on my Hashimoto’s Thyroiditis Support Group Facebook page. I had hoped to do a quick post on this before now, but better late than never. I am not an expert on what a Functional Medicine doctor is but I will give you my experience as a patient and then I will link to you the experts who can tell you the technical details. To give you a hint about my experience with a Functional Medicine approach, let me make it real simple: A Functional Medicine doctor equaled a functional person for me. That’s the bottom line!
Big bumps, little bumps. They all feel horrible when you are trying to find a way to live a “normal” life with Hashimoto’s. Every time you think you are getting ahead, it seems something else takes the place of your last solved “problem” so you can start trying to figure out how to deal with the newest one! Up until the last few years, I truly didn’t realize all my little “bumps” were related to my autoimmune condition. I thought since it wasn’t actually my thyroid bothering me, it must be another issue altogether especially since that’s what my conventional doctor told me!

I was so grateful to have received a copy of Hashimoto’s Thyroiditis: Lifestyle Interventions for Finding and Treating the Root Cause from author, Izabella Wentz! Izabella used her technical background and expertise as a pharmacist to dig at the root cause of her own thyroid problem. As a sufferer of Hashimoto’s, she was shocked at the lack of knowledge about lifestyle interventions for Hashimoto’s and autoimmune conditions in the world of conventional medicine. Her mission became to not only help her own thyroid condition, but if successful, to deliver this information to the thyroid community that she saw suffering with very little help from their current traditional protocols. This is what her new book is all about. I am thrilled to deliver this review to as many thyroid sufferers as possible to help get the word out that there are ways to help Hashimoto’s.
Even though my “daily bread” no longer is the traditional understanding of daily bread, I still consider it my daily “bread.” After all, I’m not only alive, but I am healthier after giving up the former for the latter! As most of you know, Hashimotos Thyroiditis does not think well of the glutened sustenance of the past. So, this post was requested by one of my readers to give an idea of my typical day of eating. I must say that there is much more variety in the summer for me so I am not picturing the occasional sweet indulgence of peaches, blueberries, watermelon, etc. but I am most interested in giving you a peek at my prepared food which most of the basics were learned over at the online class by GNOWFLINS which I highly recommend for anyone just starting out who wants to learn traditional food preparation methods. I love that God has given such a great variety of “fast foods” in the market during this time of year in the form of these beautiful organic fruits but it helps even more that I live in the San Joaquin Valley of California where produce is so concentrated and freshness is at it’s peak!
Ahhhh, there it is! My former favorite meal! It may look like plastic now, but before, it was heaven! And I mean heaven! That is the meal I lived for. Macaroni and Cheese! And this was just not any ordinary Macaroni and Cheese! No sir! This was gluten free Macaroni and Cheese and I added my favorite gluten free American Cheese to boot! I mean this was a cheesy, delicious, and mostly daily treat for me! Can you feel the emotion? Well, that was a good portion of my diet over two years ago and knowing it was gluten free and good for Hashimotos Thyroiditis was just a perk to the addiction! And you can tell by my before and after pictures, that gluten free indulgences didn’t really do anything positive for me.
